Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed salad prep today cooling tightly covered in prep-top cooler. Advised PIC cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Had PIC loosely cover items.

Physical facilities installed, maintained, and clean — Inspector Note: Observed multiple stained ceiling tiles in back area of main kitchen. Advised PIC the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed multiple (3) containers of sliced tomatoes cooling tightly covered in reach-in cooler #5. Advised PIC on proper cooling methods. COS: PIC had food employee loosely cover the 3 containers of sliced tomatoes.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the interior of the ice bin lid at the wait station stored as clean with black residue. Also observed food contact surface of the bulk ice machine shoot in the main kitchen stored as clean with black mold-like substance. Advised PIC that equipment food-contact surfaces and utensils at any time during the operation when contamination may have occurred. Advised PIC to increase the cleaning frequency of the ice bin lid at the wait station and the bulk ice machine in the main kitchen.
