COS: Had multiple employees wash hands at the designated hand wash sink.

Advised PIC that A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: Food employee removed multiple plates from the cookline's hand sink.

Food stored covered — Inspector Note: Observed several food products (diced tomato, diced ham, and diced onion) stored uncovered in the main kitchen's reach in cooler. Advised PIC that when except cooling, foods shall be stored covered in order to protect from contamination. Advised PIC to place covers on all foods stored in the reach in cooler in the main kitchen.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the interior (ceiling) of the microwave in the main kitchen stored as clean with encrusted food debris. Also observed food contact surface of interior of the bulk ice machine stored with residue and debris. Advised PIC that equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination may have occurred. Advised PIC to increase the cleaning frequency of the interior of microwave and bulk ice machine.
