Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed the most recent inspection report not posted at the drive thru window. The most recent inspection report shall be posted in public view. Stated to PIC to place the top 1/3 of the inspection report at the drive--thru window.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the front-food service RIC #1 with an ambient temperature of 46 degrees F. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Stated to PIC to have unit serviced.
Nonfood-contact surfaces clean — Inspector Note: Observed multiple nonfood contact surfaces (fryers, shelving unit near the 3-compartment sink, interior of reach in coolers (front food service), and griddles (main kitchen and front food service)) with excessive accumulation of food debris and grease accumulation. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Stated to PIC to thoroughly clean all nonfood contact surfaces in the main kitchen and front-food service area.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the ice bin at the drive thru area storing ice with excessive black debris. Stated to PIC that equipment food contact surfaces utensils shall be cleaned at any time during the operation when contamination may occur. Stated to PIC to increase the cleaning frequency of the ice bin lid at the drive-thru area.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed heat lamp with ambient air temperature measuring 109F. Advised PIC ambient air shall be adequate.
Nonfood-contact surfaces clean — Inspector Note: Observed exterior of warmer cabinet with debris in need of cleaning. Advised PIC non-food contact surfaces of equipment shall be kept free of accumulation.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed residue on upper metal portion of ice machine. Advised PIC equipment food contact surfaces shall be cleaned at a frequency necessary to preclude accumulation.
Nonfood-contact surfaces clean — Inspector Note: Observed multiple nonfood contact surface of the interior of reach in cooler, interior of warmer cabinet, exterior of warmer cabinet, and exterior of ovens stored as clean with severe food debris and buildup. Advised PIC nonfood contact surfaces of equipment shall be kept free of accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean all nonfood contact surfaces.
Physical facilities installed, maintained, and clean — Inspector Note: Observed ceiling tiles with grease accumulation and buildup. Advised PIC that the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Advised PIC to clean/replace ceiling tiles.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed backpack stored on shelving rack storing dry goods. Also observed cell phone near prep counter near steamwell at the front-service area. Advised PIC that all personal belongings shall be placed in a designated area in order to protect from contamination. COS: Had food employee relocate cell phone and backpack to the designated area.
PIC present, demonstrates knowledge, performs duties — Inspector Note: Observed facility with food allergy awareness training. Advised PIC that employees shall be properly training on food safety including food allergy awareness as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen can cause in a sensitive individual who as an allergic reaction. Advised to obtain allergy awareness training and to provide up request of the Health Authority.
Hands clean and properly washed — Inspector Note: Observed one employee handle register don gloves them handled clean coffee cup with handwashing step in between. Observed another employee run register at drive thru then prep without handwashing or barrier method. Advised PIC food employees shall clean their hands immediately before engaging in food preparation, after engaging in other activities that contaminate hands, and before donning gloves. COS: Had food employees cease prep and wash hands.
Response procedures for vomiting & diarrheal events — Inspector Note: Observed no written procedures for vomit/fecal response upon request. Advised PIC food establishment shall have written procedures for employees to follow.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed black mold-like substance on metal food-contact surface, interior of ice machine. Advised PIC equipment food contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of mold.
Proper cold holding temperatures — Inspector Note: Observed container of sliced cheese and cut tomatoes cold holding under 4 hours at cold well near the front-food service above 41 degrees F. Advised PIC TCS foods shall be maintained at 41 degrees F. COS:PIC placed items in walk-in cooler (WIC) for proper cooling.
Proper hot holding temperatures — Inspector Note: Observed improper hot holding at steamwell #1 in the main kitchen: one container of tenderloin and sausage patty below. 135F under 4 hours. Advised PIC TCS food items shall be maintained at 135 degrees F. or above. COS: Had food employee reheat to 165 or above.
