Stated to the PIC to obtain written notification regarding food allergens and place in public view.

Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Stated to PIC to wash, rinse, and sanitize plates

Food stored covered — Inspector Note: Observed several items stored uncovered in the RIC in the main kitchen (raw shrimp and raw chicken). Also observed ice inside the ice bin at the bar stored uncovered while not in use. Stated to PIC that all foods, except when cooling, shall be stored covered in order to protect from contamination.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surfaces of the interior of the ice machine at the wait station stored as clean with staining. Also observed the microwave in the main kitchen stored as clean with residue. Equipment food contact surfaces and utensils shall be kept clean At any time during the operation when contamination may have occurred. Stated to PIC to increase the cleaning frequency of the microwave and ice bin lid.
