Adequate handwashing facilities supplied & accessible — Inspector Note: Upon arrival, observed handsink in back of kitchen obstructed by box. A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: Had food employee relocate box.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed prep-top cooler in front food service area in disrepair. Observed foods (diced ham 57°F, Cut tomatoes 57°F) placed in prep-top cooler. Advised PIC that equipment shall be maintained in a state of repair.
Nonfood-contact surfaces clean — Inspector Note: Observed reach-in-cooler 1 with debris in the front food service. Observed multiple trays with coffee cups stored on the counter near both coffee makers on front food service counter with debris. Advised PIC that non-food contact surfaces of equipment shall be kept free from accumulation of residue.
Insects, rodents, and animals not present — Inspector Note: Observed back door in the back kitchen propped open. Advised PIC that outer openings of food service establishment shall be protected against the entry of insects and rodents. COS: PIC closed exit door.
Food separated and protected — Inspector Note: Observed an employee prepping raw shelled eggs then prep RTE waffle mix without hand washing in between steps. Advised PIC that single-use gloves shall be used for only one task and discarded when damaged or soiled or when interruptions occur in the operation. COS: Had food employee wash hands and don new gloves.
Proper cold holding temperatures — Inspector Note: Observed prep-top cooler in the front food service area with food (diced ham 57°F, Cut tomatoes 57°F, Cheese 57°F, sliced cheese 55°F, Hash browns 51°F) above 41°F or below. COS: PIC placed all TCS food in Reach in cooler for proper cold holding.
Time as a public health control: procedures and records — Inspector Note: Observed food employee take new batch of raw shelled eggs out of RIC place eggs over grill in TPHC rack without marking time. Advised PIC the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when food is removed from temperature control. COS: Food employee time marking raw shelled eggs.
In-use utensils: properly stored — Inspector Note: Observed scoops being used handles for peanut butter and chocolate chips. Advised PIC During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container.
Nonfood-contact surfaces clean — Inspector Note: Observed nonfood contact surfaces of coffee cups trays stored as clean with residue and debris. Also observed nonfood contact surfaces of shelving in reach in cooler #3 with rusting at front-food service. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Certified Food Protection Manager — Inspector Note: Observed facility with certified food safety manager certificate posted of an employee no longer employed at the facility. Advised PIC he original CFSM certificate shall be posted in public view in each food service establishment. Advised PIC to post a current CFSM certificate and post in public view.
Food separated and protected — Inspector Note: Observed food employee crack raw shell egg then handle cooked bacon with same gloves. Advised PIC single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. COS: Had food employee wash hands and don new gloves.
