Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed the 2025 Food Service Establishment permit posted in public view. A current food service establishment shall be posted in public view at all times. Stated to PIC to obtain the 2026 Food Service permit and post in public view.

Item 2-1B Critical / Risk Factor Corrected On Site (COS)

Hands clean and properly washed — Inspector Note: Observed food employee take drink then proceeded to don gloves to prep food. Also observed the same employee don gloves, handled raw bacon, removed soiled gloves, then proceeded to handle 2 slices of bread without proper handwashing. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and when switching between working with raw food and working with ready-to-eat food. COS: PIC discarded slices of bread and thoroughly washed hands at the 3-compartment sink.

Hands clean and properly washed — Inspector Note: Observed food employee wash hands for less than 20 seconds with cold water. Discussed with PIC to ensure all employees are following proper cleaning procedures. COS: Had food employee rewash hands for at least for 20 seconds with warm water.

Time as a public health control: procedures and records — Inspector Note: Observed raw shell eggs at the front food service area on TPHC being used past the expired time. If time without temperature control is used as the public health control up to a maximum of 4 hours the food in unmarked containers or packages or marked to exceed a 4-hour limit shall be discarded. COS: PIC discarded raw shell eggs and started TPHC from new start time with eggs.
