Physical facilities installed, maintained, and clean — Inspector Note: Observed ceiling tiles throughout the main kitchen area in need of cleaning due to severe staining. Advised PIC that the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. CA: Advised PIC to thoroughly clean ceiling tiles in the main kitchen.

Advised PIC that a handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: Had PIC remove multiple wiping cloths from hand sink near prep top cooler #2 in the main kitchen.

Time as a public health control: procedures and records — Inspector Note: Observed pasta on TPHC near prep top cooler #2 in the main kitchen with a time stamp without a discard time. Advised PIC the food is marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is rendered a time/temperature control for safety food as specified in paragraph 2.(ii)(I) and (II). COS: Had PIC place a discard time on time stamp for pasta.

Toxic substances properly identified, stored, used — Inspector Note: Observed a first aid kit stored directly on prep top cooler in the main kitchen. Advised PIC medicines that are in a food service establishment for the employee’s use shall be labeled with a legible manufacturer’s label and located to prevent the contamination of food, equipment, utensils, linens, and single-service and single-use articles; and located so they are inaccessible to children. COS: PIC relocated the first aid kit away from the prep top cooler and placed in a designated area.
