Proper cold holding temperatures — Inspector Note: Observed TCS foods (Frozen shrimp, fish, & chicken) in the reach in freezer thawed and cold holding above 41F. Also observed previously frozen french fries in the walk-in cooler. Advised PIC all TCS foods shall be maintained at 41F or below and all frozen products (fries) must stay frozen until cooked to prevent bacteria growth. Advised to discard.
