Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Improper cooling method used - TCS foods stored covered/sealed while actively cooling. Discussed proper cooling methods and proper ventilation while cooling with PIC.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed dish machine in kitchen not operating (out of order sign not present). Dish machine will need to be repaired, replaced, or removed; discussed this information with the PIC. CA: PIC placed and "Out of Order" sign on the unit.

Nonfood-contact surfaces clean — Inspector Note: Observed severe build up on equipment and inside of WIC. Surfaces should be cleaned to sight and touch. Cleaning frequency will need to be increased - discussed with PIC.

Will need to store belongings in a designated areas away from food contact surfaces, prep surfaces, etc. Discussed with PIC. COS: Employee removed the items and cleaned surface.
