Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed the lack of sanitizer test strips at the three-compartment sink in the main kitchen. A test kit that accurately measures the concentration of sanitizing solutions shall be provided
Insects, rodents, and animals not present — Inspector Note: Observed visible light entry at the backdoor of facility. Outer openings shall be protected against the entry of insects by solid tight-fitting doors
Food stored covered — Inspector Note: Observed raw chicken stored uncovered in the reach in cooler in the main kitchen by the walk-in cooler. Food shall be protected from cross contamination by storing the food in covered containers
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed employee wash hands in the prep sink. COS- employee stopped washing hands.
