Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed a container of cooked chicken wings cooling on the counter at room temperature. Advised PIC on proper cooling methods: under refrigeration, loosely covered or uncovered. COS: PIC placed cooked chicken wings in the WIC loosely covered for proper cooling.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed aluminum foil covering prep table and shelving unit in the main kitchen. Advised PIC nonfood contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of corrosion-resistant, nonabsorbent, and smooth material. Advised PIC to remove aluminum foil from shelving unit and prep table.

Hot and cold water available; adequate pressure — Inspector Note: Upon arrival, observed 2 hand sinks and the 3-compartment sink without hot water available. Advised PIC that hot and cold water shall be available throughout the establishment. COS: PIC rest the hot water heater, and hot water became available.
