Nonfood-contact surfaces clean — Inspector Note: Observed multiple nonfood contact surfaces (interior of warmer pass-thru #3, RIC, RIF (front) and cup holders (front)) stored as cleaned holding product with severe accumulation of dust, food debris, and residue. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Stated to PIC to thoroughly clean all nonfood contact surfaces.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surfaces of multiple microwaves (interior-ceiling) with excessive food residue. Also observed food contact surface of interior of the bulk ice machine in the main kitchen-white panel-with staining and debris. Equipment food contact surfaces and utensils shall be cleaned at any time during the operation when contamination may occur. Stated to PIC to increase the cleaning frequency of microwaves and ice machine.

Time as a public health control: procedures and records — Inspector Note: Observed a container of cut lettuce and a container of sliced tomato stored on the counter on TPHC exceeding time mark for 4 hours. If time without temperature control is used as the public health control up to a maximum time of 4 hours, food that is unmarked or exceeds 4-hour limit shall be discarded. COS: PIC had employee discard cut lettuce and sliced tomatoes.
