Approved thawing methods used — Inspector Note: Observed multiple bags of alfredo sauce thawing at room temperature on the prep table in the main kitchen. Advised PIC on proper thawing methods: Under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or completely submerged under running water at a water temperature of 70°F (21°C) or below. COS: PIC place multiple bags of marinara sauce in the WIC for proper thawing.

Advised PIC to relocate personal drink to a designated area for personal belongings.

Hands clean and properly washed — Inspector Note: Observed the PIC wash hands for less than 20 seconds at the designated hand sink during time of inspection. Advised PIC on proper cleaning procedures: food employees shall clean their hands and exposed portions of their arms, including surrogate prosthetic devices for hands or arms, for at least 20 seconds, using a cleaning compound in a handwashing sink that is properly equipped. COS: Had PIC wash hands for at least 20 seconds at the designated hand sink.

Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed a container of precooked chicken wings cooling tightly covered in the prep top cooler 1 at the front-food service area. Advised PIC that when placed in cooling or cold holding equipment, food containers in which food is being cooled shall be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Advised PIC to uncover or loosely cover precooked chicken wings and cheese stick.
