Ther permit holder shall notify consumers by written notification of the presence of major food allergens as an ingredient in unpackaged food items that are served or sold to the consumer. Stated to PIC to obtain written notification regarding food allergens and post in public view.

Approved thawing methods used — Inspector Note: Observed multiple bins of raw jerk chicken and raw curry chicken thawing at room temperature. Thawing time/temperature control foods shall be thawed under refrigeration that maintains that food temperature of 41 degrees F. or less. COS: PIC relocated items to the WIC for proper thawing.

Nonfood contact surfaces of equipment that are exposed splash and spillage shall be covered with nonabsorbent and smooth material.
