Item 15A Good Retail Practice

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed in the main kitchen, a pushcart holding multiple sauce containers lined with a cloth. Also observed in the main kitchen a storage rack holding clean utensils lines with a cloth. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Stated to PIC to remove cloth from the pushcart and shelving rack and replace with a material that is smooths, nonabsorbent, and easily cleanable.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed facility utilizing expired test strips to test the sanitization concentration for the 3-compartment sink. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Stated to PIC to obtain unexpired test strips to accurately test the sanitization concentration of the 3-compartment sink.

Adequate handwashing facilities supplied & accessible — Inspector Note: Upon arrival, observed employee filling plastic pitcher at the wait station's hand sink. A handwashing facility may not be used for purposes other than handwashing. COS: Had food employee cease filling plastic pitcher at the designated hand sink at the wait station.

Food stored covered — Inspector Note: Observed multiple foods stored uncovered in the main kitchen's RIC (a container of cut lettuce and a container of shredded carrots). Also observed multiple sauce containers on a pushcart uncovered and not in use in the main kitchen. Except when cooling, food items must be covered in order to protect from overhead contamination. COS: PIC placed covers on all items in the RIC and pushcart.
