Single-use/single-service articles: properly stored, used — Inspector Note: Observed multiple single-use bulk containers being reused to store items such as salt, cornstarch, and chicken base located on a shelving unit in the main kitchen. Advised PIC single-service and single-use articles may not be reused. Advised PIC to place salt, cornstarch, and chicken base in an approve bulk storage container that is made of food grade material.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed personal ear buds stored on shelving unit holding food products above prep top cooler #1. Also observed a personal lunch box stored in the RIC located at the wait station. Advised PIC that all personal belongings must be stored in a designated area. COS: PIC relocated ear buds and bag from units

Insects, rodents, and animals not present — Inspector Note: Observed visible light entry at the screen door with the back door open in the main kitchen. Advised PIC that outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors. Advised PIC to seal or to place weatherstrip on the screen door.

Wiping cloths: properly used and stored — Inspector Note: Observed chemical wiping cloth stored inside solution bucket 0 ppm. Advised PIC wiping clothes must be stored in solution within adequate range, criteria. COS: PIC adjusted solution concentration to 100 ppm.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed cellphone stored above preptop cooler next to food-service items. Advised PIC personal belongings must be stored in designated area. COS: PIC relocated cellphone away from prep-top cooler/food prep area.
