Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the main kitchen’s PTC with an ambient temperature of 59 degrees F, the main kitchen’s RIF with an ambient temperature of 60 degrees F, and the main kitchen RIC with an ambient temperature of 54 degrees F. Equipment shall be in a state of repair according to subsections (1) and (2) of this Rule. Stated to PIC to have all units repaired.
Nonfood-contact surfaces clean — Inspector Note: Observed multiple lids metal pans and metal containers with food debris on exterior in need of cleaning. Also observed the interior of the PTC and RIF in the main kitchen stored as clean with excessive food debris. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. COS: PIC placed items at 3-compartment sink for wash-rinse-sanitize and cleaned the interior of units.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the interior of the bulk ice machine stored as clean with pink mold-like substance and minor black staining on interior of ice machine near ice shoot. Equipment food contact surface and utensils shall be cleaned at any time during the operation when contamination may have occurred. COS: PIC thoroughly cleaned food contact surface of the interior of ice machine.
Proper cold holding temperatures — Inspector Note: Observed multiple TCS foods cold holding in the temperature danger zone about 41 degrees F at the main kitchen’s PTC (sliced cheese, shredded cheese, and cut lettuce). TCS foods shall cold hold at 41 degrees F or below. COS: had PIC relocate items to the main kitchen’s WIC for proper cooling.
Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed a bin of cooked rice stored covered cooling at room temperature on the counter in the main kitchen. Advised PIC on proper cooling methods: under refrigeration covered/tightly covered. COS: PIC placed bin of cooked rice in the walk-in cooler for proper cooling.
Insects, rodents, and animals not present — Inspector Note: Observed an insect control device stored directly above single-service cup lids. Advised PIC insect control devices shall be installed so that the devices are not located over a food preparation area, and dead insects and insect fragments are prevented from contact with exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles. Advised PIC to relocate insect control device.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the interior of the bulk ice machine stored as clean with severe black mold-like substance. Advised PIC that equipment food contact surface and utensils shall be cleaned at any time during the operation when contamination may have occurred. Advised PIC to increase the cleaning frequency of the bulk ice machine.
