Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed sandwiches & tomatoes cooling tightly in the walk in cooler and main kitchen and the front food service area cooler. CA: All foods shall be cooled properly before serving. Discussed to keep products loosely covered.

CA: Contamination shall be prevented during food prep, storage and display. Discussed to remove bread and clean racks.

Adequate handwashing facilities supplied & accessible — Inspector Note: Observed multiple pans obstructing the hand sink near the 3-comparmtne sink; observed ice stored inside the hand sink at the bar area. Advised PIC that all hand sinks shall be used for hand washing only and be maintained so that it is easily accessible at all times. COS: PIC removed pans and ice from hand sinks.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed dish machine actively being used with a sanitization concentration of 0 ppm Cl. Advised PIC sanitization concentration for chlorine shall range between 50-100 ppm Cl. Advised PIC to have the dish machine serviced and to sanitize at the 3rd compartment of the 3-compartment sink.
