Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed multiple plastic containers wet-stacked stored on shelving rack near the main kitchen's 3-compartment sink. After cleaning and sanitizing equipment and utensils shall be air dried or used after adequate draining before contact with food. Stated to PIC to achieve adequate air drying techinques.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed PTC not in use due to being in disrepair. PIC stated that motor on unit is in disrepair. Equipment shall be maintained in a stated of repair and condition that meets the requirements specified under subsections (1) and (@) of this Rule. Stated to PIC to have unit repaired.

Plumbing installed; proper backflow devices — Inspector Note: Observed active leak near the faucet of the main kitchen's veggie prep sink. A plumbing systems and hoses conveying water shall be constructed and repaired with approved materials according to law. Stated to PIC to have prep sink repaired.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed multiple food-contact surfaces of interior of bowls stored on shelving unit as clean with severe staining. Food Contact surfaces shall be cleaned to sight and touch. COS: PIC discarded and replaced stained bowls.
