Wiping cloths: properly used and stored — Inspector Note: Observed wiping cloths stored in a sanitizer bucket with a chemical sanitization of 452 ppm lactic acid. Advised PIC cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). Advised PIC to increase the sanitization concentration so the concentration ranges from 704-875 pp lactic acid.

Advised PIC the original CFSM certificate shall be posted in public view in each food service establishment. An additional copy shall be retained on file at the food service establishment at all times and shall be made available for inspection by the Health Authority. Advised PIC to post the CFSM certificate in public view.
