Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed most recent inspection report not posted in public display. Advised PIC the most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed ice machine not working, in disrepair. Advised PIC equipment shall be maintained in a state of repair.
Insects, rodents, and animals not present — Inspector Note: Upon arrival, Observed back door of facility open when not in use. Advised PIC outer openings of a food service establishment shall be protected against the entry of insects and rodents by: solid, self-closing, tight-fitting doors.
PIC present, demonstrates knowledge, performs duties — Inspector Note: Observed no food allergy training when requested. Advised PIC employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction.
Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed multiple containers of buttermilk ranch prepped today cooling tightly covered in walk-in-cooler. Advised PIC cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed walk-in-cooler with excessive dripping from cooler vent air (on top) causing excessive water build. Observed walk-in-freezer with excessive ice build-up in walk-in-freezer. Advised PIC equipment shall be maintained in a state of repair.
Hot and cold water available; adequate pressure — Inspector Note: Observed one of two sinks temperature of 83F in main kitchen not reaching minimum required hot water temperature (100F). Advised PIC hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed multiple bags stored next on rack designated for food service. Advised PIC lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions. COS: PIC relocated bags away from food.
