Food removed from their original packages for use shall be labeled with common name of the food in English. Stated to PIC to label all sauce bottles with common name in English.

Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed multiple bins of raw chicken cooling tightly covered in the main kitchen's WIC. Discussed with PIC proper cooling methods: under refrigeration loosely covered or uncovered COS: PIC uncovered bins of raw chicken from proper cooling.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed RIF #1 near the cookline with an ambient temperature of 55 degrees F. Also observed RIC #1 in the main kitchen with an ambient temperature of 45 degrees F. Equipment shall be in a stated of good repair as specified in subsections (1) and (2) of this Rule. Stated to PIC to have units repaired.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed single-rack mechanical dish machine in the main kitchen in disrepair (not in use) due to not being able to pull sanitizer through machine. Warewashing facilities shall be maintained in a stated of food repair at all times. Stated to PIC to have dish machine serviced and to sanitize utensils and equipment at the 3rd compartment of the 3-compartment sink until repaired.

Hands clean and properly washed — Inspector Note: Observed food employee touch hair new and then proceeded to prep sushi without handwashing first. Employees shall clean their hands after touching bare human body parts. COS: Had food employee cease ad wash hands at the designated hand sink.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed reach-in freezer #1near the cookline in disrepair, not in use, with an ambient temperature of 60F. Advised PIC ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use, Advised PIC to have unit serviced or replaced.

Food separated and protected — Inspector Note: Observed pooled liquid eggs stored above multiple sauce bottle near the bottom portion of the prep top cooler near the cookline. Advised PIC that that raw and ready to eat food items shall be stored according to final cook temperature. COS: PIC rearranged the bottom portion of the prep top cooler so it is arranged according to final cook temperature.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the interior ice bin lid stored as clean with black residue at the bar area. Advised PIC that equipment food contact surfaces shall be cleaned at any time during the operation when contamination may have occurred. Advised PIC to increase the cleaning frequency of the bar ice bin lid.

Toxic substances properly identified, stored, used — Inspector Note: Observed a container of butane fuel stored on prep top cooler in the main kitchen near the cookline. Advised PIC only those poisonous or toxic materials that are required for the operation and maintenance of the food service establishment, such as for the cleaning and sanitizing of equipment and utensils, and the control of insects and rodents shall be allowed in a food service establishment. COS: PIC removed container of butane fuel from the prep top cooler in the main kitchen near the cook line.
