Discussed with the PIC proper cooling methods with the PIC: under refrigeration loosely covered or uncovered. COS: PIC removed lid from cooked shrimp for proper cooling.
Physical facilities installed, maintained, and clean — Inspector Note: Observed ceiling tiles in the main kitchen in need of cleaning due to staining and residue. The physical facilities shall be cleaned as often as necessary to keep them clean by methods that prevent contamination of food products. Stated to the PIC to thoroughly clean ceiling tiles in the main kitchen.
Food stored covered — Inspector Note: Observed multiple foods in RIF #2 in the main kitchen (eggrolls, cheese sticks, okra, and hush puppies) stored uncovered when not in use. All foods, except when cooling, shall be kept covered in order to protect from contamination. COS: PIC placed covers on all foods.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed interior of the microwave in the main kitchen (food contact surface -ceiling) with excessive residue stored as clean. Equipment food contact surfaces and equipment shall be cleaned as often as necessary. Stated to PIC to thoroughly clean and increase the cleaning frequency of the interior of microwave.
