Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed gaskets to doors of chest freezer 3 and 5 in the main kitchen, not being able to fully close. Stated to PIC that equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Stated to the PIC to repair gaskets on the chest freezers' doors.

Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed the PIC wash hands at the main kitchen's 3-compartment sink multiple times. Stated to the PIC a ware-washing sink may not be used for handwashing COS: PIC ceased washing hands at the 3-compartment sink and washed hands at the hand sink.
