Wiping cloths: properly used and stored — Inspector Note: Observed wet wiping cloths stored in a chemical sanitization bucket with a sanitization concentration of 0 ppm Cl. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC increased to chemical sanitization concentration of 100 ppm Cl.

Each handwashing sink or group of adjacent handwashing sinks shall be provided with individual, disposable towels. COS: PIC replaced paper towel dispenser with paper towels in the main kitchen.

Food separated and protected — Inspector Note: Observed food employee handle raw beef patty with gloves then handled bread with the same pair of single use gloves in the main kitchen. If used, single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. COS: PIC had food employee discard bread, remove gloves, and wash hands at the designated hand sink in the main kitchen.

Advised PIC on proper cooling methods: under refrigeration uncovered or loosely covered. COS: PIC placed the container of rice uncovered in the WIC for proper cooling.

Advised PIC nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Advised PIC to rem cardboard lining shelfing underneath grill and to replace with smooth, durable, and easily cleanable material.
