Food properly labeled; original container — Inspector Note: Observed multiple containers and sauce bottles not labeled with its common name in the main kitchen area. Advised PIC working containers holding food or food ingredients that are removed from their original packages for use in the food establishment hall be clearly and legibly identified, in English, with the common name of the food. Advised PIC to label all containers and sauce bottles in the main kitchen area.

Advised PIC that food service establishments with drive-thru windows will post the current inspection report and also have the inspection report posted so that a minimum of the top one-third of a copy of the current inspection report is visible through each window allowing customers to easily read the score, date of inspection and establishment information. Advised PIC to obtain the most recent inspection report and post in public view.

Advised PIC that outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors. Advised PIC to place a weatherstrip at the bottom of the back door of the facility.

Advised PIC Employees are properly trained in food safety, including food allergy awareness, as it relates to their assigned duties. Food allergy awareness includes describing foods identified as major food allergens and the symptoms that a major food allergen could cause in a sensitive individual who has an allergic reaction. Advised PIC to obtain a food allergy awareness training and to train all employees on food allergens.

Time as a public health control: procedures and records — Inspector Note: Observed cooked chicken wings stored at the fryer basket without a time stamp. Advised PIC that if time without temperature control is used as the public health control up to a maximum of 4 hours the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. COS: PIC discarded chicken wings.
