Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed in the main kitchen's fryer basket #2 chicken wings cooling at room temperature. Discussed proper cooling methods with the PIC: under refrigeration loosely covered or uncovered. COS: PIC placed chicken wings in the WIC loosely covered for proper cooling.

Wiping cloths: properly used and stored — Inspector Note: Observed wiping cloth stored on prep top cooler shelving when not in use outside of sanitizer bucket. Cloths used for wiping food spills shall be jeld between uses in a chemical sanitizer solution in between use. Stated to PIC to store wiping cloths in a chemical solution in-between use.

Advised PIC that when removing food products from its original container, food containers must be labeled of its contents with a common name. Advised PIC to label all sauce bottles throughout the main kitchen area.
