Advising PIC shall demonstrate appropriate knowledge when answering EHS questions.
Management knowledge, responsibilities, reporting — Inspector Note: Observed establishment operating without signed employee agreement forms. Advised PIC to have employee agreement forms signed by employees and readily available to show EHS during routine inspections.
Proper hot holding temperatures — Inspector Note: Observed TCS foods hot holding at the steam table under 135 degrees. Advised PIC all TCS food shall be hot held at 135 degrees and above.
