Warewashing facilities: installed, maintained, used; test strips — Inspector Note: Observed chemical dish machine in the main kitchen with a sanitization concentration less than 50 ppm Cl. A warewashing machine that is installed shall be designed and equipped to automatically dispense detergents and sanitizers. Stated to the PIC to have mechanical dish machine serviced and to utilize the 3rd compartment of the 3-comartment sink for sanitization until dish machine is repaired.

Food properly labeled; original container — Inspector Note: Observed multiple bottles of in-house prepped drinks in need of label of contents. Advised PIC label information shall include: the common name of the food, or if there is no common name.

Physical facilities installed, maintained, and clean — Inspector Note: Observed multiple ceiling tiles in need of cleaning. Advised PIC the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed interior food contact surface of dish machine with black staining in need of cleaning. Advised PIC equipment food-contact surfaces and utensils shall be cleaned: at a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.
