Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Upon arrival, observed the 2026 Food Service Establishment permit not posted in public view. Stated the PIC that a current Food Service Establishment shall be posted in public view at all times. Stated to PIC to obtain the 2026 Food Service Establishment and post in public view.

Item 14B Good Retail Practice

Utensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed multiple utensils wet stacked at the storage rack near the 3-compartment sink and on shelving underneath the prep table. Also observed multiple plates on various shelving units in the main kitchen stored as clean and not inverted in order to protect from contamination. Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored in a self-draining position that allows air drying and covered or inverted. Discussed with PIC proper airdrying techniques and to invert multiple plates in order to protect from contamination.

Food stored covered — Inspector Note: Observed multiple Foods uncovered in the RIF and the RIC #1 in the main kitchen. Also observed a bin of flour not in used and open near the walk-in cooler in the main kitchen. Stated to PIC except when cooling TCS foods, items shall be kept covered in order to protect from contamination.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed food contact surface of the interior of the bulk ice machine in the main kitchen near the 3-compartment sink storing ice with pink mold-like substance. Also observed food contact surface (ceiling) of multiple microwaves at the cookline in the main kitchen with old food residue. Equipment food contact surfaces and utensils shall be cleaned during the operation when contamination may occur. Stated to PIC to increase the cleaning frequency of the bulk ice machine and microwaves.
