Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed walk in cooler measuring ambient temperature of 68 degrees F. PIC said he was aware walk in cooler was not temping properly and called to have it repaired. However, PIC opened store despite walk in cooler and TCS food items inside no maintaining temperatures 41 degrees F or below. CA: Must repair walk in cooler. $75 premise visit fee will be assessed for coming back out to observe walk in cooler holding temps 41 degrees F or below. CA: All equipment shall be kept in good repair and proper adjustment.
Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee personal items (cell phone, drinks) stored with facility items in main kitchen. COS: Advised to relocate. CA: Keep employee personal items in designated area to prevent cross contamination.
Response procedures for vomiting & diarrheal events — Inspector Note: PIC could not produce written vomitus/fecal cleanup procedure. Advised must obtain proper procedure with all required equipment to effect written procedure. CA: All food service facilities shall have written vomtius/fecal cleanup procedure.
Food separated and protected — Inspector Note: Observed raw chicken stored with whole lemons and stored next to raw shrimp in walk in cooler. The raw chicken and raw shrimp was above onions and soy sauce in walk in cooler. The soy sauce and whole onions were stored next to raw shell eggs on bottom shelf. COS: PIC moved with proper separation. CA: Store food items according to final cook temp.
Proper cold holding temperatures — Inspector Note: Observed TCS food items held in walk in cooler measuring above 41 degrees F. COS: PIC moved TCS food items to large reach in coolers. CA: All TCS food items shall be cold held at 41 degrees F or below.
Approved thawing methods used — Inspector Note: Observed frozen tilapia thawing in meat sink in main kitchen without running water. COS: PIC turned on running water less than 70 degrees F. CA: Use proper thawing methods to thaw TCS food items.
