Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee personal drink stored with facility goods in dry storage. Also observed employee boots stored with sugar in dry storage. COS: PIC moved items to designated area. CA: Keep employee personal items in designated areas.
Proper cold holding temperatures — Inspector Note: Observed TCS food items held at main kitchen walk in cooler #2 (center) measuring above 41 degrees F. COS: PIC relocated to other walk in cooler. Advised to have cooler checked. CA: All TCS food items shall be cold held at 41 degrees F or below.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed ice obstructing handwashing sink near the entrance of the kitchen area. Advised PIC handwashing facility may not be used for purposes other than handwashing. Advised PIC to remove ice from the handwashing sink.
In-use utensils: properly stored — Inspector Note: Observed handle of ice scoop inside bulk ice machine touching ice. Advised PIC during pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in a clean protective location if utensils, such as ice scoops, are used only with a food that is not TCS> COS: PIC removed handle of ice scoop from the ice.
Physical facilities installed, maintained, and clean — Inspector Note: Observed absorbent ceiling tiles in the men's restroom. Advised PIC that ceiling tiles shall be nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, toilet rooms, mobile food service unit servicing areas, and areas subject to flushing or spray cleaning methods. Advised PIC to replace absorbent ceiling tiles for nonabsorbent ceiling tiles.
Physical facilities installed, maintained, and clean — Inspector Note: Observed multiple ceiling tiles in need of cleaning throughout the main kitchen area. Also observed 1 ceiling tile damaged near the walk-in coolers. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Advised PIC to clean ceiling tiles throughout the main kitchen area and to replace 1 damaged ceiling tile.
Insects, rodents, and animals not present — Inspector Note: Observed insect control device stored above rack with items and utensils for restaurant use. Advised PIC that insect control devises must be placed away from food prep, clean items, and utensils. Advised PIC to relocate insect control device.
Insects, rodents, and animals not present — Inspector Note: Observed visible light entry at the back door of the facility. Advised PIC all outer openings shall be protected from the entry of pests. Advised PIC to place a weatherstrip at the back door of the facility.
Adequate handwashing facilities supplied & accessible — Inspector Note: Observed sanitizer bucket obstructing hand sink near the prep sink used for meats. Advised PIC that all handwashing sinks shall be easily accessible at all times. COS: PIC removed sanitizer bucket from hand sink.
