In-use utensils: properly stored — Inspector Note: Observed handle stored in a box of raw chicken touching raw chicken in the WIC. Advised PIC that during pauses in food prep, utensils shall be stored in food with their handles above the top of the food container. Advised PIC to reposition scoop's handles so it can prevent contamination.

Physical facilities installed, maintained, and clean — Inspector Note: Observed ceiling tiles in the main kitchen in need of cleaning due to grease accumulation and debris. Advised PIC physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Advised PIC to thoroughly clean cceniling tiles in the main kitchen.

Adequate handwashing facilities supplied & accessible — Inspector Note: Upon arrival, observed area near the 3-compartment sink (back of the kitchen) without a handwash sink. Advised PIC a handwashing sink shall be located to allow convenient use by employees in food preparation, food dispensing, and ware washing areas and in or immediately adjacent to toilet rooms. Advised PIC to place a handwashing sink near the 3-compartment sink.

Time as a public health control: procedures and records — Inspector Note: Observed fried rice on counter next to the fryer basket on time without a time stamp and exceeding 70 degrees F. Advised PIC if time without temperature is used as a public health control up to a maximum of 6 hours, the foods shall have an initial temperature of 41 degrees F. or less when removed from the temperature control and the food may not exceed 70 degrees F. COS: PIC discarded fried rice.
