The original CFSM certificate shall be posted in public view in each food service establishment. An additional copy shall be retained on file at the food service establishment at all times, and shall be made available for inspection by the Health Authority. Place the original CFSM certificate in public view.
Food separated and protected — Inspector Note: Observed in the RIC #2 in the main kitchen a container of raw been stored above raw fish and a container of raw fish stored above cooked collard greens. Raw and ready-to-eat TCS foods shall be stored according to final internal cooking temperature. COS: PIC reorganized RIC #2 in the main kitchen for proper storage hierarchy.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed hanging thermometers not supplied in chest freezer, and RIC #2 in the main kitchen. Advised PIC that ambient air temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Advised to obtain hanging thermometers for all units.
Hot and cold water available; adequate pressure — Inspector Note: Observed cold water not available at the hand sink in the main kitchen. Advised PIC that hot and cold water under pressure shall be available. Advised PIC to have cold water available at the hand sink.
Plumbing installed; proper backflow devices — Inspector Note: Observed severe leakage at the hand sink and meat prep sink in the main kitchen. Advised PIC that a plumbing system shall be repaired according to law. Advised PIC to repair plumbing at the prep sink and hand sink.
Physical facilities installed, maintained, and clean — Inspector Note: Observed absorbent ceiling tiles near the prep area of the main kitchen. Advised PIC material for indoor ceilings shall be smooth, durable, easily cleanable and nonabsorbent for areas subject to moisture such as food preparation areas and areas subject to flushing or spray cleaning methods. Advised PIC to replace absorbent ceiling tiles with nonabsorbent ceiling tiles.
