Nonfood-contact surfaces clean — Inspector Note: Observed nonfood contact surfaces of the interior of multiple warmer cabinets in need of cleaning due to excessive food debris at the front food service and main kitchen. Advised PIC that nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean nonfood contact surfaces of the interior of warmer cabinets at the front food service area and main kitchen.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed a personal bag stored on a shelving unit directly next to single service items. Also observed a charger and personal beverage at the prep table. Advised PIC that Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur. COS: PIC had food employees remove all personal belongings and placed them in a designated area.

Advised PIC that when removed from its original container, all container's contents shall be labeled with its common name in English. Advised PIC to label all seasoning shakers and sauce bottlers with common name.

Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed multiple warmer cabinets in the main kitchen with the interior surface lines with cardboard. Advised PIC nonfood contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of corrosion-resistant, nonabsorbent, and smooth material. Advised PIC to remove cardboard lining from multiple warmer cabinets.

Advised PIC maintaining receiving records for deliveries during non-operating hours and periodically evaluating foods upon their receipt as specified within DPH Rule 511-6-1-.04(3)(m). Advised PIC to obtain Key Drop Delivery Contract and provide to the health Authority upon request.

Hands clean and properly washed — Inspector Note: Observed food employee handle phone, donned gloves, and then initiated food prep at the prep top cooler in the main kitchen. Advised PIC food employees shall clean their hands and exposed portions of their arms before engaging in food preparation and before donning gloves to initiate a task that involves working with foods. COS: Had food employee cease prep and wash hands and donned new gloves.
