COS: PIC and food employee inverted plates and bowls at the prep table in the main kitchen.
Approved thawing methods used — Inspector Note: Observed multiple pieces of raw beef thawing at room temperature on rack, observed one container of raw pork thawing at room temperature on counter. Advised PIC Under refrigeration that maintains the food temperature at 41°F (5°C) or less; or completely submerged under running water: at a water temperature of 70°F or below. COS: Had PIC relocate items to cooler for proper thawing.
Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed inspection report not posted in public display. Advised PIC the most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. Advised PIC to relocate the most recent inspection report in public view.
Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed permit not in public display. Advised PIC post the permit in a location in the food service establishment that is conspicuous to consumers. COS: PIC relocated the 2026 permit in public view.
Certified Food Protection Manager — Inspector Note: Observed CFSM posted not in public display. Advised PIC the original CFSM certificate shall be posted in public view in each food service establishment. An additional copy shall be retained on file at the food service establishment at all times, and shall be made available for inspection by the Health Authority. COS: PIC relocated the CFSM certificate in public view.
Food separated and protected — Inspector Note: Observed in walk-in-cooler, raw shell eggs stored above radish; cooked pork directly on raw cooked pork in a container; raw beef stored above bell pepper and raw pork stored above radish. Advised PIC food shall be protected from cross contamination by: except as specified in paragraph (i)(IV) of this subsection, separating raw animal foods during storage, preparation, holding, and display from: Store according to minimum final internal cooking temperature. Advised PIC to organize the WIC for proper storage hierarchy.
Proper cold holding temperatures — Inspector Note: Observed one crate of raw shell eggs cold holding on counter above 41F at time of inspection. Advised PIC Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC relocated raw shell eggs to cooler for proper cooling.
Proper hot holding temperatures — Inspector Note: Observed multiple pork egg rolls hot-holding under 135F at fryer basket. Advised PIC Hot and Cold Holding except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F (57°C) or above. COS: Had PIC reheat pork eggrolls at fryer for proper reheating for hot holding.
Insects, rodents, and animals not present — Inspector Note: Observed visible light entry at the front door of the facility. Advised PIC that outer openings shall be protected from pests and rodents by solid, tight-fitting, self-closing doors. COS: PIC repaired front door so that light entry is not visible.
