Advised PIC that a provisional permit expires within 60 days of issuance date. Advised PIC to obtain the permanent permit of the facility and post in public view.
In-use utensils: properly stored — Inspector Note: Observed in RIF at the cookline, a bowl used as a scoop without a handle. Advised PIC during pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container. Advised PIC to obtain scoop with handle.
Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed prep-top cooler turned off holding TCS foods. Advised PIC equipment shall be maintained in a state of repair. COS: Had PIC turn on unit.
Nonfood-contact surfaces clean — Inspector Note: Observed rusting on racks stored above 3-compartment sink and stains on rack storing clean utensils. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
Proper eating, tasting, drinking, or tobacco use — Inspector Note: Observed food employee chewing gum while prepping salad. Advised PIC employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: Had food employee cease eating at prep area.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed multiple cups at bar area stored as clean with food debris. Advised PIC equipment food-contact surfaces and utensils shall be clean to sight and touch. Advised PIC to wash, rinse, and sanitize cups.
Proper cold holding temperatures — Inspector Note: Observed multiple TCS food items cold holding at PTC, unit turned off. Advised PIC that when cold holding TCS foods shall be at 41 degrees F or below. COS: Had PIC turn cooler unit on to initiate proper cooling.
Proper cooling methods used: adequate equipment for temperature control — Inspector Note: Observed multiple single-service cups of shredded cheese and disced tomatores cooling tightly covered at the bottom portion of the pre top cooler in the main kitchen. Advised PIC on proper cooling methods. COS: Food employee demonstrated proper cooling methods by removing lids.
Hot and cold water available; adequate pressure — Inspector Note: Observed hand sink #1 in the main kitchen cold water in disrepair. Advised PIC that hot and cold water under pressure shall be available to all sinks in the establishment. Advised PIC to have hand sink #1 serviced.
Physical facilities installed, maintained, and clean — Inspector Note: Observed 2 ceiling tiles near the prep sink and the 3-compartment sink to be absorbent and porous. Advised PIC that ceiling tiles near the food prep area, storage for food, and ware-washing areas shall be nonporous, easily cleanable, and nonabsorbent. Advised to replace with nonabsorbent ceiling tiles.
Physical facilities installed, maintained, and clean — Inspector Note: Observed food splatter and staining on walls Advised PIC the physical facilities shall be cleaned as often as necessary to keep them clean.
Insects, rodents, and animals not present — Inspector Note: Observed insect control device above clean utensils near the 3-compartment sink. Advised PIC the device is not located over a food preparation area.
