Advised PIC lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur.

PIC present, demonstrates knowledge, performs duties — Inspector Note: Observed unauthorized person in kitchen at time of inspection. Advised PIC persons unnecessary to the food service establishment operation are not allowed in the food preparation, food storage, or warewashing areas, except that brief visits and tours may be authorized by the person in charge if steps are taken to ensure that exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles are protected from contamination. COS: Unauthorized persons left kitchen.
Adequate handwashing facilities supplied & accessible — Inspector Note: Upon arrival, observed hand sink obstructed by cooler. Advised PIC A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: PIC removed moveable cooler away from handsink.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed staining on white interior panel food contact surface. Advised PIC equipment food-contact surfaces and utensils shall be cleaned: at a frequency specified by the manufacturer; or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.
Food properly labeled; original container — Inspector Note: Observed container of dry grits and dry oatmeal stored in containers without a label. Advised PIC Food packaged in a food service establishment, that is not provided by a foodservice employee upon consumer request, shall be labeled as specified in law, including 21 CFR 101- Food labeling, and 9 CFR 317 Labeling, marking devices, and containers. Label information shall include: The common name of the food, or if there is no common name, an adequately descriptive identity statement.
