Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the main kitchen's WIF food in disrepair not able to close without locking. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Stated to the PIC to have the WIF's door repaired.

Outer openings shall be protected against the entry of insects, pests, and rodents by self-closing, solid, tight-fitting doors. Advised PIC the physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of foo products. Advised PIC to thoroughly clean ceiling tiles throughout the main kitchen.

Proper cold holding temperatures — Inspector Note: Observed TCS foods (single- service low fat milks and chocolate milk (single-service)) cold holding in the temperature danger zone above 41°F at the front food service milk box #2. Advised PIC that when cold holding TCS food, foods shall range between 41°F or below. COS- Food employees relocated low fat milk and chocolate milk in the walk in cooler for proper cooling.
