Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed mechanical warewashing machine in use and food-contact surface not reaching 160ºF. Orange indicator did not change colors. C/A: In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194ºF, or less than for a stationary rack, single temperature machine, 165ºF. COS: PIC not using dish machine until repaired. Maintenance technician able to repair while on site. New reading 180ºF.

Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed, in front food service ice bin on left below soda machine, black buildup of debris on interior in the back of ice bin that could pose possible contamination to ice stored in it. Observed, in main kitchen, ice machine shield on interior of ice machine with a buildup of black and pink slime. C/A: Equipment food-contact surfaces shall be kept clean to sight and touch.
