Proper cold holding temperatures — Inspector Note: Observed several TCS items (see asterisk* items) cold holding above 41F in main kitchen walk-in cooler and reach in cooler, and Teem kitchen reach in cooler. CA: TCS foods shall be maintained at 41F or below when cold holding. COS: PIC advised that food temperature fluctuated due to breakfast buffet breakdown for the Teem kitchen and a delivery earlier this morning for the walk-in cooler/reach-in in the main kitchen. 2% milk, yogurt, and shredded cheese were discarded. All other items were observed to be cooling at an appropriate rate to reach 41F within 2 hours.
