Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed the walk-in cooler #1 (the walk-in cooler on the left right as you walk into the main prep area) with an ambient of 45F. C/A: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. NOTE: 1) items that were cooling moved to other coolers to finish the cooling process. Technician arrived to service the unit during inspection. 2)This facility may not use this unit until approval from the health authority is given.

Proper eating, tasting, drinking, or tobacco use — Inspector Note: Observed an employee drink (tea) in a glass cup located on a prep table while active food prep was occurring in the main kitchen. C/A: Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. COS: cup moved to area designated for employee belongings; discussed code provision with the CFSM
