1 recorded inspectionUtensils, equipment and linens: properly stored, dried, handled — Inspector Note: Observed several dishes wet stacked on shelf above 3-compartment sink in main kitchen. C/A: After cleaning and sanitizing, equipment and utensils: 1. Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
Nonfood-contact surfaces clean — Inspector Note: 1. Observed heavy debris and black, slime buildup under cabinets of drink machine in self service area in lobby. 2. Observed water pooled along interior base of beverage cooler 1 in front food service area. C/A: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
PIC present, demonstrates knowledge, performs duties — Inspector Note: Facility provided key drop agreement with vendor (Performance foods) but is unable to provide records/documentation of temperatures of TCS foods upon delivery as required. C/A: The food service establishment shall maintain records of the written agreement as specified in subsection (3)(m)3. of this Rule as well as records that show the delivery condition and temperature of the products upon receipt of delivery. Records shall be made available upon request by the Health Authority
Proper cold holding temperatures — Inspector Note: Observed several TCS foods cold holding at above 41F along front food service area and self service areas in lobby. C/A: All TCS foods cold held must be maintained at 41F and below. COS: All food discarded and replenished except cream cheese in self serve cooler. Per PIC, cream cheese was out of temperature less than 1-hour due to restock. Cream cheese moved to WIC in ice bath and observed at 41F by end of inspection.
Proper hot holding temperatures — Inspector Note: Observed cooked sausages hot holding at below 135F in warmer drawers above prep top cooler in front food service area. C/A: All TCS foods hot held must be maintained at 135F and above. COS: Sausages discarded.
