Observed food container with no handle used as portioning utensil in container of dry rice in main kitchen. C/A: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon. COS: Scoop was placed in flour with handle above food. container was removed from rice and replaced with utensil with handle.
Single-use/single-service articles: properly stored, used — Inspector Note: Observed several trays stored right side up with food contact surface exposed to contamination in main kitchen on countertop and above freezer. C/A: Cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: (i) In a clean, dry location; (ii) Where they are not exposed to splash, dust, or other contamination COS: Trays were inverted.
Proper cold holding temperatures — Inspector Note: Observed ranch, blue cheese, and honey mustard cups that should be stored refrigerated per manufacturer cold held above 41F on countertop in main kitchen. Observed raw hamburgers cold holding above 41F in main kitchen prep top cooler. C/A: Cold held TCS foods shall be maintained at 41F or below. C/A: Ranch, blue cheese, and honey mustard cups discarded. Burgers were moved to reach in freezer and reached 41F at 4:05pm.
Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Facility did not have a permit posted in facility. C/A: Post the permit in a location in the food service establishment that is conspicuous to consumers. COS: EHS emailed a copy of the permit to PIC and they printed and posted it.
Single-use/single-service articles: properly stored, used — Inspector Note: Observed cooked chicken wings stored in 2 cardboard boxes. C/A: Single-service and single-use articles may not be reused. COS: PIC transferred wings to a plastic container with lid.
