Response procedures for vomiting & diarrheal events — Inspector Note: Observed bodily fluid clean up kit with no disinfectant on site. C/A: Responding To Contamination Events. A food establishment shall have written procedures for employees to follow and an EPA registered disinfectant effective against Norovirus available on-site at the food service establishment when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food service establishment.
Food stored covered — Inspector Note: Observed container of pizza sauce and pan of pizza dough stored uncovered on prep table in the front food service area. C/A: Food shall be stored covered to protect from overhead contamination. COS: Foods were covered.
Food-contact surfaces: cleaned & sanitized — Inspector Note: Observed dish machine in use measure 0ppm of chlorine sanitizer in the ware washing area of main kitchen. C/A: Dish machines using chlorine for sanitization shall dispense at least 50ppm of chlorine sanitizer. COS: Facility will use three compartment sink to wash and sanitize dishes until the dish machine is repaired.
Wiping cloths: properly used and stored — Inspector Note: Observed the sani bucket at the font service area with a concentration below 200ppm and the temperature of the water was 61*F C/A . Cloths in-use for wiping counters and other equipment surfaces shall be: (i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and (ii) Laundered daily. A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), P have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions included in the labeling, P and be used only in water with 500 ppm hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions; P COS Sanitizer bucket was changed and the concentration was at 400 ppm
