CA: Food contact surfaces must be clean to sight and touch; dishes must be sanitized with chlorine at 50 to 100 PPM. COS: Ice machine emptied, washed, and sanitize; Dishes washed in 3 compartment sink until sanitizer is registering in the dishwasher; and counter top can opener washed, rinsed, and sanitized.
