Adequate ventilation and lighting; designated areas used — Inspector Note: Observed employee beverage containers and bag of food stored next to clean dishes and sauce bottle on prep table in the main kitchen. C/A: Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. COS: items moved to designated area away from food service equipment.

Proper cold holding temperatures — Inspector Note: Observed several TCS foods cold holding above 41 F in the front food service RIC and WIC in main kitchen. (see asterisked* items) C/A: TCS foods that are cold holding shall be maintained at 41F or below. COS: All items discarded. WIC ambient temperature 49F, RIC ambient temperature 60F, equipment not functioning properly. Facility will stay open with remaining food on hand that is cold holding properly. Per PIC, all incoming deliveries will be rerouted to other locations until WIC is repaired.
