Posted: Permit/Inspection/Choking Poster/Handwashing — Inspector Note: Observed inspection report is not posted for public view. C/A: The most current inspection report shall be prominently displayed in public view at all times, within fifteen feet of the front or primary public door and between five feet and seven feet from the floor and in an area where it can be read at a distance of one foot away. Correct within 72 hours.

Adequate ventilation and lighting; designated areas used — Inspector Note: Observed extreme heat in main kitchen. C/A: If necessary to keep rooms free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes, mechanical ventilation of sufficient capacity shall be provided and in good repair. Correct within 10 calendar days.

Proper cold holding temperatures — Inspector Note: Observed several cold holding violations in multiple cold holding units through out main kitchen and bar areas. C/A: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS: Foods cooled to 41F by 2:15pm in back storage reach-in cooler

Proper hot holding temperatures — Inspector Note: Observed TCS foods hot holding below 135F in steam well in main kitchen. C/A: Hot holding foods shall be maintained 135F or above at all times. COS: Reheated above 165F by 2:10pm in steam well
