Food and nonfood-contact surfaces cleanable, properly designed, constructed, and used — Inspector Note: Observed prep top cooler 5 and the bottom reach in cooler in grill kitchen is unable to maintain TCS foods 41F or below. C/A: Ensure cold holding equipment is kept in good repair. Correct within 72 hours.

Proper cold holding temperatures — Inspector Note: Observed multiple TCS food items that were cold holding above 41F in prep top cooler and bottom reach in cooler in the grill kitchen and prep top cooler in the main kitchen. CA: All TCS food items that are cold holding shall be maintained at 41F or below. COS: COS discarded food items.

Proper hot holding temperatures — Inspector Note: Observed hot dogs and boiled peanuts holding below 135F in the steam well in the grill kitchen. CA: All TCS food items that are hot holding must be maintained 135F or above. COS: Hot dogs were discarded. Boiled peanuts were reheated to 165F @ 12:45 PM in the main kitchen.

Proper date marking and disposition — Inspector Note: Observed the following food items being held in the walk in cooler in the main kitchen past the 7 day expiry date: tomato soup prepped 6/19, roasted peppers prepped 6/11, tomato paste prepped 6/18, ranch prepped 6/18, and bleu cheese prepped 6/18. CA: A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen. Day of preparation counts as day 1.
