C/A: Ensure cold holding equipment is kept in good repair. COS: Facility discontinued using the unit until further notice.

C/A: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC moved items to walk-in cooler. Per PIC, the items were placed in the unit at 7am for cold hold.
